Hemp & Sweet Potato Patties

These sweet potato buger patties make a great healthy dinner option.

Ingredients

  • 500g (2 heaped cups) sweet potato, peeled

  • 1 large carrot, grated

  • 3 spring onion stalks, sliced

  • 1/2 cup fresh parsely, roughly chopped

  • 1 tsp crushed garlic (or use powder)

  • 3/4 cup hemp seeds

  • 1/2 cup bread crumbs

  • salt & pepper, to taste

  • Fillings: fresh spinach and kale leaves, sliced tomato, cheese, red onion, avocado, hummus, or any of your favourite fillings.

Preparation

Step 1

Cut sweet potato into large cubes and steam until tender.


Step 2

When potatoes are tender, place unto a mixing bowl and mash, leaving a few lumps.


Step 3

Place all chopped vegetables into the mashed sweet potato and mix until well combined.


Step 4

Add garlic, hemp seeds, bread crumbs and salt and pepper, mix well.


Step 5

Form into burger patties and cook in  alrge pan for 2-3 minutes each side.


Step 6

Place in burger bun with desired fillings.
